150 g butter

120 g caster sugar 

1 egg yolk 

5 ml almond essence 

90 g ground almond 

180 g flour

100 g chocolate

We had a BBQ with mediterranean food, especially French and Italian cuisine. I had decided to prepare an Italian cookie (from the Piedmont region) and a French tart. This is the cookie recipe. Let the butter soften or impatiently put it in the microwave for 30 secs. Add the sugar and beat with an electric mixer until it becomes light and fluffy.  Mix in the egg yolk, the almond essence and the ground almond as well. Switch off the mixer and beat in the flour with a wooden spoon. The dough should rest for 2 hours in the fridge. Preheat the oven for 160 C, line baking sheets with baking parchment. Roll small balls of the dough with approximately 1,5 cm diameters, this way they should make 30 pieces. (Next time I'll try to get them smaller.) Place them on the baking sheets, leave space among them as they will flatten out. It takes around 20 minutes for them to get golden brown in the oven. Get them onto wire racks with the baking parchments and let them cool. Melt the chocolate in the microwave for about a minute, spread it on half of the cookies, stick them together in pairs.
